Under The Straw Hat Walkthrough - Kingdom Come Deliverance 2 Guide - IGN

Under The Straw Hat is an Activity/Task found in the vineyard north of Kuttenberg in KCD2. This quest can be started as a part of the side quest: In Vino Veritas. Therefore, you need to start that quest and then complete this Activity/Task alongside it. Once at the vineyard, speak to the recruiter out front.

The recruiter will tell you to speak to Jerome in the vineyard. He will sign you up to work for him, which involves picking plants that grow in-between the vines and carrying sacks to the yard. If you don't complete this, chances are he will not be impressed, and you will fail the task, even if you come back to do it later.

Whenever you start the work day, or if you start tomorrow if it is late in the evening, you will need to pick plants or carry sacks for up to 12 in-game hours to get Jerome's approval and your pay.

The minimum amount of work you can do to satisfy Jerome is carry one sack and pick one set of plants every hour from when Jerome tells you to start. But it is worth picking a few more groups of plants every hour just to be safe. If you have to wait until the next day, ensure you show up at 6am sharp.

Once you have picked one set of plants and carried one sack, skip time by one hour and repeat until you reach 5pm. When you reach 5pm, do not skip time, as if you make Jerome wait to pay you, he will fire you on the spot. Therefore, clean up any remaining plants or carry any sacks until the objective updates.

Sacks and plants can be found throughout the whole vineyard, so don't just stick to one area. When the objective updates, talk to Jerome to get your pay and complete the quest.
